The vineyard parcels are distributed in places very considered within the geography of the Valley of the Salnés. Ones next to the sea, with marked Atlantic air influence. Others, more to the interior, with remarkable influence in them of pine groves and forests of eucalyptuses. The balanced presence of both factors, contributes of precise form in the formation of the nature of our grape albariño and in the personality and final definition that will have our wines. Vendimia of manual form and with a well-taken care of selection of grapes in the vineyard, affecting their nature and its external aspect of quality enters warehouse in boxes of small capacity, the grape is deposited in a transporting tape, where it is made a new selection, having eliminated those clusters and not appropriate grains of grape for the wine elaboration that is tried to make.

ELABORATION FRORE DE CARME

In his first stage of process in winery, the grapes is destemming and are put under a smooth one squeezed, to pass next to static deposits of maceration. In them, the grape will remain several hours, obtaining a good dissolution of its components in must. After the carrying out of pursuit controls and when estimate that this dissolution is the appropiate, is to proceded to the separation of the must of the solid parts of the grape grain. This one will be go to the deposits of clearing and the solid parts to presses, where they will be put under pressed smooth.

The clearing is made in suitable deposits, to low temperatures and with a duration of time adapted to the nature of musts.

Finished the desfangado phase, clean must goes to the fermentation deposits. In them and also to low temperature, it will remain several weeks, in a slow process, smooth that will be training of the personality of the wine which we are going to obtain.

Passed this phase, the clean wine already constituted goes to its deposits of guard, where it will make, also of slow form, smooth and in, some cases partial, the malolactic fermentation. To his conclusion and already in the spring of the following year, with his defined nature and personality, it goes to deposits of second guard, in them, to low temperature it will pass his phase of refined and natural stabilization. During this phase, whose duration will be of several months, the wine finishes defining and reaching its self characteristics.

With the made elaboration it is persecuted to obtain a wine that is carrying of the varietales characteristics of the wine-grape albariño, those that as much have contributed to give excellence to this grape, in good conjunction with the character of the current and modern wine, that is so attractive to the connoisseurs and consumers from these wines.

That, with these totally defined, in the autumn it is come to make his putting in bottle. During this time of stay of the wine in winery, a year, all the intrinsic components of our grape albariño have been extracted, integrating them in a perfect balance in the obtained final wine, reaching besides during these months in winery, a natural stability, personality and character, looked for in the grape from it origin.

PRESENTATION FRORE OF CARME

One has chosen a bottle of own design that takes in itself, a character of last times and simultaneously a conclusion and design of boldly present forms, that surely will mark tendencies in the next future. Also it incorporates a new system of stopping of hermetic glass of hermetic lock, favourable to the evolution of the wine since not provider the oxidation keeping all the floral and fruit range of a wine of the characteristics of our Albariño does not facilitate the oxidation maintaining, avoiding in addition the TCA (flavor to cork).

The outer design of the bottle evokes a sequence characteristic of a marine bird (Cormoran), that finds in Rías Baixas its ideal habitat.

In addition, years ago we were pioneering in the launching of a wine with a termosensible label (our first Albariño that we sent to the market), now in this design are possible to be appreciated different figures, serigrafy in silver, outlining the bottle, which in one of them (in the upper part of the mark), takes a fish in its beak in silver that becomes of rosaceous/reddish color and it will only be visible when the wine reaches the optimal temperature of consumption.
